Me and my friend went out on New Year’s Day and we had such a fun evening. We enjoyed the savory and sweet souffle. It was an out of the ordinary experience and we were glad we tried it. It’s wonderfully light and sweet.

Whether the souffle is savory or sweet, it will start with a seasoned base, then the beaten whites will be folded into this base. It almost always starts with some butter and flour, which must be cooked on the stove to remove the raw taste of the flour. Hot milk or cream is usually added, then the yolks added slowly. To thicken the mixture, the flavor of the souffle is really concentrated in the base, which will be diluted by the clouds of neutrally flavored egg whites that get folded. When it came of the oven, the souffle was puffed up and fluffy, and it fell after 5 or 10 mins as risen dough does. We punctured the top of the souffle and poured the chocolate lava on it.
